Ingredients
¼ cup maple syrup or raw agave nectar
1 cup Italian almond flour
½ cup almond butter (sprouted)
Recipe Directions
1. In a Vitamix, blend all the ingredients until a completely smooth dough forms.
2. Form into the desired shape with a cookie cutter.
3. Dehydrate at 110 Fahrenheit for about 1-2 days or until crisp. Enjoy!
Note: For chocolate cookies, add 1-2 tablespoons raw cocoa powder.

This recipe is similar to the Almond Butter Cookies in the Raw Food Real World book.
The almond flour can be made by soaking and dehydrating raw almonds, and then ground to a flour in a Vitamix.

These cookies are AWESOME! I've missed oreos SO much. Last night I made these and the dough tasted JUST LIKE OREOS! I was SO excited. They are gooey now like brownies but still on their way to becoming little cookies.

123- there's no reason to buy the Italian almond flour, it's just a brand i happened to come across that is truly raw and the almonds are blanched before they are ground up. It is available at rawguru.com. Or, since this is so expensive, you can make it yourself. Soak and dehydrate truly raw almonds, and blend A LOT of them in the Vita-Mix until it turns into a fine (or coarse) flour. Btw, the Raw Sprouted Almond Butter is a recipe that I posted on here, because most carriers don't sprout their almond butter. I've found that non sprouted nuts really aren't digestible, and it really makes a difference. Enjoy

To say that blanched almonds are truly raw is not a correct statement. Here are a couple definitions of blanching:
1. To plunge raw foods quickly into boiling water then into cold water to stop cooking. 2. Refers to partially cooking an ingredient, usually vegetables, by placing them in boiling water for a few minutes.
As you can see the cooking process is started right away. Some of the enzymes and minerals will be killed. This is not TRULY raw.

I made these over the weekend. It was so worth the effort. I had to match the almond flour from scratch. These are the closest your going to come to a SAD sugar cookie but with out the guilt. These would be so great dipped in cacao, next time I will have to try it with cacao in the mix. This is a keeper in our house.
