Ingredients
- 2 1/2 cups cashews
- 1 tablespoon lemon juice
- 2 cloves garlic
- 1 1/2 cups water
- 1/2 teaspoon thyme spice
- 1 teaspoon sea salt
Recipe Directions
- 1. Throw all ingredients in the blender and blend 'til they get alfredoey! It'll get really nice and creamy, so keep blending... And you're done!
- 2. Serve over raw vegan "noodles!"
- Raw Noodles
- Of course, you know that raw "noodles" are simply spiralized zucchini or squash. (Or kelp noodles that you buy at a store.)
- If you don't have a fancy spiralizer nor any kelp noodles on hand, just do what I do: peel the vegetable and discard the peelings. Once all of the tough peel has been removed, just use your vegetable peeler to make "noodles" out of the remainder of the vegetable. I usually discard the really seedy core though. Zucchini makes the best noodles.
- I'd recommend zucchini. They have the best texture and their taste is quite bland and it takes on the sauce's flavour very nicely. But please don't use cucumber for the noodles! (Cucumbers are too wet; avoid cucumber noodles.)

I miss cheese, I really do. But I tell ya, this raw alfredo sauce recipe has a cheesy, creamy texture that is oh, so alfredoey.
I can honestly say that I like this alfredo sauce more than SAD (standard American diet) alfredo sauce. HONEST!
If you've tried my raw mayonnaise recipe the taste is quite similar, although this alfredo sauce is quite garlicky, whereas the raw mayo does not contain any garlic. Enjoy this absolutely delicious alfredo sauce recipe.
This recipe is quite large, and it actually keeps in the fridge really nicely.
This recipe works best with zucchini "noodles" (see below for more info) or with raw vegan kelp noodles.
Toppings
Sometimes I top my alfredo sauce and noodles with vegetables. Your taste-buds will let you know what topping you might like to try on your pasta.
My husband prefers broccoli and red pepper. I love parsley, mushrooms, tomatoes, and olives. To each his or her own! Edit: Actually, I love black pepper and parsley and that's it! Simpler is better!
But for your first time just try it simple: raw alfredo noodles and sauce.

What is the black stuff in the picture? Looks like some black pepper but the bigger seed looking things are what I am talking about. Hey I love your site. I am not ready to go fully raw yet but I am diabetic and your recipes more than quench my sweet tooth and my blood sugar does not go sky rocketing over the moon. I love all the recipes so far so you may get me yet. Thanks for helping to improve my health my dear.

Just tried this recipe tonight and I sliced yellow squash, cucumbers and carrots in thin slices and them drizzled the sauce over it. Also chopped some fresh garden tomatoes over it and it was good. I don't know if anyone has ever tried this but I was thinking about trying it over raw rice - the Lotus forbidden black rice that you can soak overnight and then I drain it over the course of the day to eat for supper. Typically I serve it with an olive oil basil sauce or an olive oil chili powder sauce but I want to try it with the alfredo! Just wondering if anyone has tried it yet!

This recipe is incredible! My husband and I tried kelp noodles and were so surprized by how crunchy they were. Is that how they should be or was it a bad batch? Everyone is always talking about kelp noodles but I have never heard mention of such an extreme texture.

I made this last night & it absolutely was the best Alfredo sauce I've ever had. I raved to everyone! As a single lady, I halved the recipe & it made enough for two additional meals. I'm in day 3 of doing the raw diet & The Rawtarian is my bible! Thank you :)

Just discovered your site and am so inspired to make some of your recipes - especially the alfredo :) Just wanted to check to see if you knew that most "raw" cashews sold in shops are not truly raw....they are taken out of their outer shell using boiling water or oil! Check out the info at www.edenhealthfoods.com , they sell the truly raw cashews that I buy, they are way more delicious than normal cashews, bigger, crunchier and sweeter :)

I just made this tonight and it was great! Now I'm just waiting for my grocery store to carry Kelp Noodles, which they said would be in about a week. How long will the sauce stay good in the fridge for?

Thank you so much for your recipes. I am new to the raw world and at first was pretty overwhelmed, but after reading your site I think this is something I can handle. :) Today I've made the celery soup, the brownies/frosting and the alfredo sauce. The soup is gone (yum), the brownies are chilling for tomorrow, and the alfredo sauce is tupperwared away to be eaten over the next couple days. Since you are a raw food genius, I am hoping you will come up with some Indian fare. ;) I adore super spicy Indian food. Now that I have a bit of confidence, I will definitely be playing around with curry and coconuts myself. :) Thank you again for helping me see that the raw food does not have to be difficult.

So good! I make a really great (unhealthy) vegan mac and cheese sauce and could not find anything raw that was comparable. This comes REAL close! (Also, I realize that this is not advertised as mac and cheese...but it's a suitable substitute).
It's so good, I made a quarter batch for lunch today to put on my salad and I'm remaking it for my bacon egg and cheese loving husband tonight for dinner.
Thank you for the recipe. I'm sort of new to all of this uncooking/unprocessed scene. This is a quick/easy/tasty comforting meal! Appreciated!
