Ingredients
- 1 cup cashews
- 3 cups water
- 2 tablespoons agave nectar (or honey)
- 1 tablespoon pure vanilla extract
- 1 teaspoon cinnamon
- 1/8 teaspoon sea salt
Recipe Directions
- 1. Blend the cashews and water in a high-speed blender. I use my VitaMix blender, which is the best blender in the world! Blend very well so that the liquid resembles a thin milk.
- 2. Add the remaining raw cashew milk recipe ingredients and blend again.
- 3. Drink this delicious raw cashew milk recipe and experience heavenly bliss! As mentioned above, your raw cashew milk can be drunk straight, or served as a milk substitute in cereals and other recipes.

Raw cashew milk recipes do not come close to this sweet, almondy cinnamony raw cashew milk recipe.
Raw cashew milk can be used for many many purposes in your raw food lifestyle.
I tend to drink this cashew milk as a delicious sweet treat, perhaps as a dessert, or I serve it over home-made dry cereal or I even splash a 1/4 cup on top of a bowl of my raw oatmeal.
If you have all these ingredients on hand this recipe really only takes a minute to prepare. Cashew milk can be stored in the fridge for a couple of days, but I would reblend before serving it in case any ingredients settle. But a batch of raw cashew milk doesn't last long in my house anyway!

I made this yesterday and it's absolutely gorgeous. I used less honey and slightly less almond essence than suggested and it still turned out fine. I used it on my breakfast bowl. *yum*

How long should I soak cashews or almonds (and in what) before blending? Would it soften them enough for a blender not as strong as the Vitamix?

Hi McKenna, I don't always soak, but if you have a crappy blender, I would suggest putting the nuts in a large bowl. Cover them with water so that all the nuts are totally swimming in water. Place in fridge. Let them sit like that for a few hours (3-6 hours), then dump the water out (without losing any nuts), rinse them clean, and then use :)

I was wondering if it is necessary to soak the cashews? I've tried a few different nut milk recipes that require soaking the nuts, so I just wasn't sure if it made a difference or not?

I have been soaking raw nuts, seeds and grains as per Sally Fallon's book Nourishing Traditions for years. Why is it not necessary to soak the cashews? It sure would be a time and effort saver, but I have hypothyroidism and I have read that soaking removes anti-nutrients like phytates, tannins and goitrogens. I know it wouldn't hurt to soak them, but I guess I just wondered about your reasons for saying it is not necessary to soak for this nut milk. Thank you for any information!

This is similar to buying organic, it’s GREAT to do it, but if that is too overwhelming/time consuming/expensive etc, then it’s okay not to.
However, in your case, if it helps you, then do soak! I do not know about hypothyroidism and whether soaking helps. You could ask your doctor or a nutritionist.

Why are you saying it's not necessary to soak them? It's easier on digestion and it insures that any chemicals on it if any will reduce it and come out in the water. I'd soak it for at LEAST 6 hours.

Hey there, I am new to the raw lifestyle, and although I have been doing only two months so far, I love it. However, afraid of not having enough protein in my diet, I do use a lot of nuts. I eat nuts every day a few times a day. I make cheeses and breads, and crispy apple with almonds for breakfast for example, and granola. I see that you don't use much nuts in your diet. Can you tell me your food ratio? what is the percentage of your veggies vs. fruits vs. nuts? and how bad is to have raw cacao every day. In place of coffee I drink raw cacao with cinnamon and agave for breakfast in the mornings, and sometimes through the day a few times. Sorry for all the questions, and thank you in advance!

I made this using my Vita-Mix with honey and vanilla extract. I didn't have almond extract on hand but it turned out delicious! Whole Foods carries raw cashew milk made by BluePrint Juice (very similar to this recipe) for $9.99 for 16 oz. This is much cheaper to make and just as yummy and nutritious. Thank you for this recipe!

Me again ;) just a quick q - you make your almond milk with just almonds and water, yet cashew milk with these added extras - is this because you use this as a 'dessert' version, ie do you make regular cashew milk with just cashews and water? In nz organic cashews are cheaper than organic almonds, as the cashews are from Vietnam while the almonds are from (super expensive) Australia! So cashew milk is going to be cheaper for me as a fridge 'staple' :)

Hi Buffy! You are lucky that cashews are cheaper than almonds in NZ!! You are exactly right that I use the cashew as a dessert version and the almond more as a blank slate. So it is definely okay to make a simple cashew milk - for example, maybe 1 cup water to a third cup cashews? Make a small batch and see how you like it

My son-in-law put me on to making my own nut milk. I just put nuts. (Cashews in this instance in my Bullet and cover with water. Give it a whirl and it is delish. You can add other stuff but not necessary. I drank some and I put some on my oats.

Smooth and satisfying are great descriptors for this drink! I was very glad to find your recipe, which included the ingredients I was looking for - agave nectar & cinnamon so I didn't have to guess with the proportions. The almond extract was an added plus.
