  • 1. Scoop out your avocado and place avocado flesh in bowl and stir gently to make an almost smooth texture (but I do like to leave a few chunks to keep the texture slightly chunky). Make sure you're using a very perfect avocado for this raw guacamole. The avocado sets the flavour of the whole dish, so don't use a funky one!
  • 2. Either hand chop your tomato and onion into very small pieces or place the tomato and onion in a food processor and pulse just enough to make them into very small pieces.
  • 3. Chop the cilantro (also known as coriander) into tiny pieces. Could also use your food processor again for this if you like, especially if it's already dirty from the above.
  • 4. Add all the raw guacamole recipe ingredients (don't forget the lemon juice and the pinch of salt) to the avocado and stir gently.

You are helping me so much! My daughter wanted mexican tonight. She won't eat raw but at least I could eat along with her. I made this and your taco "meat" and it was great together. I used big swiss chard leafs because that is what I had on hand. I placed a spoon of "meat" on the leaf and a spoon of guac....awesome. They both taste great together. Now if only you could tell me what to do with all my kale. I wanted to try out a salad but have sooo much kale leftover that I don't know what to do with it. I can't eat it alone - I don't like the taste that much.

If you have a dehydrator do kale chips.

Wilted kale salad - very good - google it, even if you don't like kale taste much

How can I tell if the avadado is perfect?

When picking avocados - go for small ones. Not GREEN but not too dark or squishy either. Like a firm plum is perfect. When you open it and if it smells weird do not use, throw away.

Just curious.. why lemon juice and not lime juice? This is exactly how I make my guacamole, except I use lime!!

I love it but it makes me want chips. I put it on a leaf of romaine with some salsa, that was good. When I get a dehydrator maybe I can make a good cracker for it. Any suggestions?
