Ingredients
- 2 cups cashews
- 3/4 cup water
- 1 tablespoon lemon juice
- 1 teaspoon sea salt
- 1/3 cup nutritional yeast
- 2 tablespoons water if needed to facilitate blending (optional)
Recipe Directions
- 1. Throw all ingredients in a high-speed blender.
- 2. Blend. This recipe can be a bit of a @#$#$% when blending, so if you're having trouble getting the mixture to mix properly, turn your high-speed blender off and insert a spatula down one side to let a pocket of air down near the blades. Then remove the spatula, put the lid back on and continue blending--going from slow all the way up to fast again. You can also add a bit more water (mentioned above) but I try not to add any more water than three additional tablespoons because I like to keep the texture nice and thick.
- 3. Serve with noodles . For noodles, you all know that I am obsessed with kelp noodles, so that's what I use for my raw macaroni and cheese extravaganzas. But if you're cheap and/or disorganized and don't have raw kelp noodles, you can make zucchini noodles using a carrot peeler or a spiralizer.
- 4. Garnish with lots of pepper! Normally, I don't really like pepper, but this recipe just totally gets better when you sprinkle a lot of pepper on it. Don't ask me why. It just does. Oh! And you could also even serve with raw ketchup :)
- Enjoy this raw macaroni and cheese recipe! I don't have children, but something tells me they would just love this raw recipe as a treat on a cold, wintry day.

By The RawtarianRaw macaroni and cheese... This recipe was born out of me saying to myself, "I need some raw macaroni and cheese right now or I am going to scream!" So I busted out my Vitamix and a sac of cashews and got to work creating this simple but ooeeey, gooey cheesey recipe.
Beware: this raw macaroni and cheese sauce is very potent! Start with a tiny bit of sauce and mix it into your noodles and then add more as your tastebuds dictate. If you add too much this raw mac and cheese recipe can be overpowering and way too saucy. So start slow with the sauce!
OK, and due to my noodles it's not really a raw macaroni and cheese recipe, it's more like spaghetti and cheese, but the taste is what's important, right??!

Another fabulous recipe! I made this for lunch today, and it was brilliant. I was surprised by how much the sauce tasted sort of swiss cheese-ish. Delicious! And warm from the Vitamix...ahhhh. I added a sprinkle of garlic powder on top, and it was terrific.
FYI, I used zucchini noodles. I spiralized four small-to-medium zucchini and I still have a ton of sauce left over. Yay!
Thank you so much for these easy-to-follow recipes. As someone new to raw, I can't tell you how much I appreciate your approach.

I’m so so glad I found your website! I’m new to the rawtarian lifestyle and I’m very picky with fruits n veg but I want to eat healthy n lose some weight. I’ve been doing the juicing and smoothies but I need something more satisfying…ESP coming off the s.a.d. Lol! So I’ve tried chia seeds which I love! But I need to buy the vita mix n a dehydrater to make these raw some recipes you have on here…I’m excited to try your Mac n cheese w kelp noodles and your pizza crust recipes! Thanks so much for creating this site! I also love the list if kitchen staples for a rawtarian! Keep doing what you do and thank you so much!

I am so excited to try this recipe, especially with the raw ketchup recipe. Mac and cheese with ketchup is definitely a comfort food for the women in my family!

I made this for dinner (kelp noodles for me, cooked macaroni for my bf), and it was awesome! I ate so much that I'm sick to my stomach! I think the nuts absorbed the water from the cooked noodles, because bf's sauce looked like clotted cream. Mine was amazing. The kelp noodles don't absorb the sauce, and don't much flavor on their own, so they taste like pure cheezy sauce. Yum! I like the recipe so much I posted it on my facebook!

Oh my lands! I just got my shipment of kelp noodles in the mail yesterday, so I was excited to try this. It is wonderful! I was surprised that my hubby and teenage daughter wanted to taste it, too. They both loved it! I am so glad I found your site. Your recipes are some of my favorites. Simple, few ingredients, and many are instant gratification! I am certain I can maintain this lifestyle with great recipes like yours! Thanks!

I am quite addicted to kelp noodles. I order them by the case load. :) Once basil starts coming in season and you can get it cheaper, buy loads of fresh basil and make pesto and serve with kelp noodles (if you'll still have any left, that is!!) :) Yum.

I am going to make this recipe this week and was wondering how long the "cheese" keeps (since it is just me in the house).
* And the kelp noodles are amazing. I use them a lot instead of zucchini. It's nice to switch things up from time to time.

1. This recipe keeps very well! Definitely a few days+ and it does not lose any of its goodness nor does it get gross or anything. Be sure to keep it tightly sealed.
2. You are also lucky because you get to eat this all by yourself!!!! :)
This recipe will definitely make a few meals for you 3 or 4 meals, I'd say. I have eaten a whole batch of this on its own over a couple of days, so no worries re: portions for one.
