Ingredients
- 1 cup cashews
- 2 cups water
- 2 tablespoons honey or agave nectar
- 1 tablespoon vanilla
- 1 teaspoon cinnamon
- 1 pinch sea salt
- 1/4 cup chia seeds (reserve)
- 1/4 cup raisins (reserve)
- 1/16 teaspoon pure almond extract (optional)
Recipe Directions
- 1. Put all ingredients (except the chia seeds and the raisins) in a high-speed blender and blend until smooth.
- 2. Place chia seeds and raisins in a large bowl. Pour the blended mixture on top of the chia seeds and rasins, mixing slowly and thoroughly.
- 3. Cover raw rice pudding mixture and refrigerate for at least one hour. The purpose of refrigerating and letting the mixture sit for at least an hour is to allow the chia seeds to absorb the liquid. (Chia seeds are similar to tapioca. They increase in size!) Ideally, let this recipe sit in fridge for 3 hours. Overnight is even better!
- 4. Stir thoroughly before serving.

Oh dear, another raw rice pudding recipe. I am starting to get a reputation as the type of girl who only eats chia pudding, lol.
Well, since I've discovered this raw rice pudding, the fact is true. I don't even need to leave the house as long as I have a batch of this old-fashioned rice pudding on hand!
This recipe really does taste like the traditional rice pudding that you may have had as a child growing up, complete with the plump raisins.

how many servings in this recipe? I see a serving is 7 oz. Do you think grated broccoli would substitute for the cashews, or what about almonds, walnuts? Cashews are an avoid for "O" blood type. thanks!

Hi Linda!
This recipe makes about 4 servings. Grated broccoli is NOT a good substitution for cashews in this recipe (bad flavor)!! Can you do macadamia nuts? Those would work instead :)
(The cashews/macadamia nuts are needed to supply creaminess to the recipe.)

No macadamia either, could do almonds or walnuts blanched, do you think either or both of these would work?

Hi Linda, No, almonds will be too gritty and walnuts aren't quite right either.
Instead of the cashews, you can do 1 large banana instead, it will change the flavor about, but it will give you the creaminess that you need.

Hi; I made up the recipe for the 'rice pudding' and by mistake I added 1/4 c shelled hemp seed and wow, the pudding is unbelievably yummy. .An honest mistake, but glad I did now...cant wait to eat some...

I read I can substitute amaranth in place of the rice. Do you think this would work with amaranth instead and omitting cashews?

Hi Jessica, you will definitely need the cashews. So don't omit the cashews or the chia seeds no matter what else you add

I am learning about raw foods to keep grains out of our diet so the rice flakes would not work for that although a good idea for others.

Raw rice pudding is delish! I put some into serving size containers in the freezer. I discovered the last one yesterday, after about two months. It was still wonderful! I'm making some more right away!
