Ingredients
- 2 cups dried, shredded coconut
- 1/2 cup tahini (sesame seed butter)
- 1/2 cup maple syrup (or agave nectar or honey)
- 1/2 cup coconut oil (liquid)
- 1 teaspoon pure vanilla extract (or 1 vanilla bean)
- 1/2 teaspoon celtic sea salt
Recipe Directions
- 1. Add all ingredients into large bowl except the shredded coconut.
- 2. Stir with spoon until well mixed.
- 3. Once combined, add shredded coconut. Stir again until well combined.
- 4. Drop cookies onto a cookie sheet. Cover and freeze for at least 30 minutes. (Cookies will harden when cooled.)
- 5. Store leftover raw vanilla drop cookies in freezer.

Best served cold, straight-out of the freezer because coconut oil will liquify again once warm.
This recipe makes approximately 15 drop cookies. These are super sweet and rich, so just one after dinner does a lot to satisfy that sugar fix!
Please note: the tahini is definitely the secret ingredient in this recipe. So do not try to substitute it with anything. (And do NOT use sesame seeds instead of real oily/liquidy tahini! The texture will be all screwy and not good if you do that. For realz!)

OMG! These are so good! I have not even had the finished cookie yet but I did lick the bowl and it was good! I love coconut and can't wait to get my hands on a cookie in about 30 minutes.

Amazing!!! I followed the exact recipe, something i almost never do :-) it was delightful! They are so creamy and buttery...i whipped the mixture in the food processor then added the coconut. I'm thinking of adding goji berries or dried cranberries and slivered next time.

Question -I REALLY REALLY hate shredded coconut -have my whole life (smile). This recipe looks sooo good. Can it be made without it. Is there ANY substitute for shredded coconut - I truly can't eat it.

Hmm interesting challenge! In this recipe you could maybe use sesame seeds instead? But that might be a bit too heavy, maybe half sesame seeds and half hempseed hearts instead of the coconut???? not too sure though, it's a bit risky as I haven't done that myself.
(PS: You would still need to use the coconut oil though, that's what makes it harden)

Thank you. I am a SUPER NEW beginner - still waiting on my blender and food processor to arrive next week. I love coconut oil so I'm ok with that - just not shredded coconut. I will try to experiment with your suggestions. Thanks again!

These are divine, amazing recipe. Made them 3 times already!! Could u sub in raw cacao butter? Also do u have any recipes based with raw cacao butter??

I'm not sure how I feel about these. For some reason, they were way too greasy for me. I think I'd like to try them using less of the coconut oil. Since they are high in fat and calories, I kind of want to LOVE them to eat them. But everything else I've made on this site (quite a few things) has been AAHHHHHMAZING!

Hi Kari, Thanks for your honest feedback. They are pretty greasy, you could probably cut back on the coconut oil somewhat and still get a similar texture.
