Ingredients
- 1 1/2 cups cashews
- 1 cup almonds
- 1 cup dates
- 2 tablespoons agave nectar
- 1 tablespoon coconut oil
- 1 tablespoon vanilla extract
- 1/2 cup cocoa powder
- 1 pinch sea salt
Recipe Directions
- 1. Process almonds and cashews in a food processor until they (almost) resemble flour. Add dates, agave nectar, coconut oil and vanilla. Process until well mixed and doughlike.
- 2. Add the cocoa powder and sea salt and process again.
- 3. Form into cookies. You can refrigerate and eat as is, or dehydrate them for a few hours for a warm, gooey fudgy experience!

By The RawtarianThese are the best raw chocolate cookies that I've ever had. It's a bit touch and go whether they even need to be dehydrated at all, since the batter is quite dry and conceivably you can form them into cookies and eat as is or refrigerate so that they firm up even more. But when dehydrated for a few hours they get gooey and warm and they're so good! They will never get crispy though (due to the coconut oil), so if dehydrating don't bother dehydrating for more than a few hours.
This recipe does require a number of ingredients, unlike this simple lemon cookie recipe. But the flavor is worth it, because sometimes you just need that chocolatey fix.
I especially recommend eating these cookies warm. The insides are gooey and fudgey while the outside is kind of crispy. It's a perfect fix if you're missing the comfort and flavour of fresh-baked cookies!
If you're looking to really replicate a delicious, fatty-tasting cookie, make sure to add the coconut oil. It really makes or breaks these raw chocolate fudge cookies.

If I soak the cashews and almonds overnight will they still go blend into a flour like consistency?
If not what would you recommend I do?

Hi Joshua,
No, ideally they will be dry to get a flour-like consistency.
Normally, I'd say not to bother soaking them at all.
If you are committed to soaking to remove the enzyme inhibitors etc, you can soak them and then dehydrate them (if you have a D) or you can dry them somehow, in oven perhaps or even just by drying in clean tea towel and air drying.

These are truly fantastic !!! I am no longer sneaking cookies out of the pantry. I can enjoy this cookie guilt-free and honestly say it's delicious. Dehydrating them for 2 hours seems to have made it a bit sturdier and sooo yummy! Thank you for the new staple in my life.

O ... M... G... These are so f%^&*@# good I can't believe. These are the best ever, as in across all cookies you would have possibly tried. I really didn't mold them into cookie shapes - as I don't have that much patience. I flattened out the dough on a tray and cut it into squares, and then pretty much ate the whole slab. My goodness, unreal!!

Haha - yes, you and I are cut from the same cloth. Unless I'm taking photos, I usually just make little lump-shaped cookies that have finger squeeze marks on them haha. Not very fancy but tastes just as good!

These are great. Finally bought a hand blender so thought I'd try these out. Now I don't have to pay $8 for 6 cookies at the local health food store! These taste almost exactly like them. Gonna try to incorporate raspberry next time I try these.

Nice Bobo! Definitely better, cheaper and easier in the long-run if you can make sweets from home. Next time see if you can pick up a food processor, it'll work even better!

The handblender I bought comes with a food processor container attachment, so I was able to use that! I'm gonna be trying more raw recipes now that I actually can blend/process things lol ^_^

Raw mini key lime pies! And I borrowed a bunch of raw cookbooks at the library this week. I'm a beginner cook so I'm spending a lot of time learning basic cooking skills right now.
Btw, my older brother also loved the cookies. Both of us are meat-eating, not-exactly-healthy types. I usually don't even like vegetarian fare besides salads and falafels, but this recipe got me excited to healthier possiblities.

Definitely, Bryan. You can use maple syrup, agave nectar or honey interchangeably in my recipes, 1:1 ratio.

Hi there just got my wonderful dehydrator 3 days ago after being raw for 2 years so now I can't wait to try some of your yummy recipes.I do not have para flex sheets yet but noticed you used parchment paper. Can I use regular roll of parchment paper and cut it to size for now or does it have to be dehydrator brand to make it work???Any idea?

Im on my 3rd batch, yummo! The only thing I changed was cacao instead of cocoa. I love them straight from the fridge. So does my 2 year old.
