Kandace's Thoughts

This is a quick, easy, and delicious salad. I first saw this prepared at a raw foods class given by Dr. Ariel Policano and have been enjoying it ever since.
A small portion of the salad is a great side, but it is also filling enough to serve as a stand-alone meal.

From the picture, it looks like the avocado gets completely mushed up - there are no chunks in the salad. Is that correct? This looks great - I bought everything to make it and want to make sure I do it right. Thanks!

Quite true, Pam. The more you mush with your hands, the better the salad is!

Alissa Cohen has one like this. It's really good. You have to really get your hands in there and molest the heck out of that kale!

This recipe looks great and I love kale. I put it in my smoothies all the time. Especially the dino kale. I am not keen on the other kind of kale. The purple one. I put it in the smoothies but I don't think it would be good in this salad. Anyway.. I am going to try it tonight! Thanks kandace. :)

I've really started to incorporate more kale in my diet. If you do like kale, try out a "green smoothie":http://www.therawtarian.com/community/recipe/green-and-gone-smoothie. I love it!

I bought kale last night with my groceries because it was cheaper than romaine, can you believe that? I was worried the taste would be too strong but I make this recipe and it was fantastic! I love the heartiness of the kale, so much "meatier" than romaine, LOL.

Wow, I am definately going to try this since I never have eaten kale before. I really did not know that it could be eaten raw. LOL

I didn't have any avocado on hand, so I used tahini instead. It's delicious! I also tried it with some raita I made (using cashews instead of yogourt) - another pure delight!

I just saw a really amazing looking take on this salad by The Raw Chef - "Wilted Kale Salad with a Creamy Chipotle Dressing":http://therawchef.blogs.com/russell_james/2006/11/wilted_kale_sal.html
