Recipe Directions

1. Toss the noodles with lemon juice and set them aside for now.

2. Add all ingredients for sauce into food processor and whir away.

3 Clean out your food processor.  Add in all the ingredients for the mushroom filling. Mix.

4. On a plate, layer zucchini noodles, mushroom filling and sauce. Repeat.There should be enough for 2 separate dishes.

5. Warm in the dehydrator (or toaster oven) for 30 minutes. Cut in and enjoy!

Kathryn this looks great. Do you rinse the lemon juice off of the zucchini? Can't wait to try it.

This looks fantastic Kathryn! I just became addicted to portobellos and now I have another excuse to eat them. I had them at like 9am today. Kinda gross I know:)

This was our very first raw meal and it was so VERY VERY good! Thank you for the recipe. My family ate it up! Got us over the fear of raw :)

The mushroom filling sounds sooooo good! I am wondering what it would be like with a cultured nut cheese, since I haven't made any raw lasagna since I learned about culturing nut cheeses with probiotics :)

zer0 - not gross to me, but then I'm weird. It's 8:30 am and I'm eating cauliflower with garlic dressing & I'm waiting for my son to wake up so I can go buy some zucchini to eat with my leftover alfredo & mushrooms!

Now, I'll have to buy extra zucchini so I can try this, too!

I didn't, because I really love the flavour (even after the MC haha). But if you don't like lemon, then wash away! Or you could even leave out the soaking =)

I make a zuc. lazagna as well! Try making a nice mac. or cashew cheese and layering that in there as well. OMG it is awesome!!
