Ingredients
1 Large Melon (2 lbs or 900g), (peel and remove seeds)
3/4 or more Tbsp. grated ginger, (or more to taste)
1 Tbsp. Fresh Lemon Juice, (or more to taste)
1 tsp. Agave Nectar
1/2 Cup Coconut Milk
Pinch of Sea Salt
Chives for Garnish
Recipe Directions
Blend all (except chives). Original recipe uses whipping cream instead of coconut milk. I suppose you could try using a heavy almond cream or something. It suggests stirring in after the mixture has chilled for 30 minutes.
Either way, it’s delicious chilled.

I've just tried this recipe and it was so nice,I used the coconut milk.

This was very nice. I used almond milk, as it's what I had on hand, and omitted the salt. I also drank it as a smoothie. I'll be making this again, but with coconut milk. I think it will be even tastier with that flavor. I also left off the chives, but may try it next time as well.
