This is one of the best soups in my repetoire. It’s adapted from a soup I tasted at a raw food restaurant. It sweet and filling and delicious!!

Serves 1-2
Found in:
Ingredients
1 Young coconut, water and meat
1 Avocado, Cubed
Aprox. 1/4 cup of Cilantro
2 dash Nama Shoyu
1 dash Olive oil
1 Small to medium zuchinni
Recipe Directions
Put zuchinni, coconut water and meat, half the cilantro, olive oil and nama shoyu in blender and blend well. Pour into a bowl and add avocado and the rest of the cilantro. That’s it. Done!

I'm new to raw cooking but I gave this one a try tonight. The pulp from the coconut was a little overpowering. Does anyone have suggestions on softening up the coconut meat? Soaking in water or an oil? I also thought that it could use some lime juice and some other flavors to offset the coconut. Not bad though.

derek, did you use young coconut? It is usually soft like a cooked egg white. Upon blending, it becomes very smooth.

If you are using young coconuts the meat is soft and kind of rubbery like, you shouldn't need to soften.
