Ingredients
2 1/4 cups water
3/4 cup cashews
3/4 cup coconut oil (melted)
1 cup agave or honey
3 tablespoons carob powder or cacao powder
Recipe Directions
1. Stir ingredients in a large bowl until fully assimilated. This must be done quickly, as the coconut oil will harden as it sets.
2. Pour into bowls or Tupperware and freeze, stirring every 20 minutes for the first 2 hours. Then freeze overnight.
Holistica's Thoughts
By holisticaThis was supposed to be a raw pie filling, but in experimenting with ratios, I found that I could make a vegan chocolate frozen treat that looked, felt, and tasted very much like real ice cream.
I know that honey isn't vegan, but the recipe comes out better if you split the sweetener 50/50 honey and agave. It is also smoother if you cut the carob powder with cacao powder (also 50/50), or just use cacao powder by itself.
