Makes 2 cups

Ingredients
2 cups raw cashews (soaked)
2 tablespoons lemon juice
2 tablespoons dates (soaked)
1 tablespoon coconut butter
1 teaspoon vanilla extract or half a vanilla bean
¼ teaspoon salt
Recipe Directions
1. Place all ingredients in a high-powered blender and process until creamy.

Anyone know if this frosting can keep well in the freezer? Maybe in a mason jar? I have so much left that I can't get through! Thanks!

I just tried a carrot cake recipe on here and loved the cake but not the icing. I think I will try this next time!

I made this with a little almond milk to top shannonmarie's cinnamon rolls[http://www.therawtarian.com/community/recipe/cinnamon-rolls] with and it was really terrific. Just what I needed! Thanks for posting it!

Hi there.
By "coconut butter", do you mean coconut oil? Or a product made of ground coconut meat - with or without some proportion of coconut oil? I've seen this term used both ways, and I find it very confusing.
