Ingredients
½ small white cabbage (finely shredded)
2 carrots (julienned or grated)
1 apple (julienned or grated)
1 onion (finely sliced)
1 stalk of celery (finely sliced)
Handful of sultanas
½ handful of goji berries
3 tablespoons olive oil
2 tablespoons cider vinegar or lemon juice
1 tablespoon liquid sweetener
1 tablespoon coriander/cilantro (finely chopped)
½ mango (chopped into smallish cubes)
Recipe Directions
1. Mix all the ingredients together well until everything is thoroughly combined. You can use a food processor or by hand to grate the vegetables.
Fee's Thoughts
By FeeI know this won't be considered well combined with the vegetables and fruit together, but it tastes good.
Keeps for 3 days in the fridge.

I just made something like this for my mom. She really liked it. The colors are amazing. I added a little harveys bristol creme to make it more appealing to her.Instead of mango I used peach.

hey fee, i figured if i put this message on here you would see it as it only had the one comment on before! :P im originally from portslade by sea, moved to bognor regis when i was 8 and stayed there until just before my 36th birthday then moved to manchester (oldham) for a year to photograph the dark peak district, then moved here tto germany and married my lovely. i was just interested to know where you are from and where you are in the north as it seems such a lovely coincidence :)

Tried and enjoyed this a couple of times with the apple cider vinegar. Sadly, no goji or sultanas were added.
