Recipe Directions

CRUST

1. Blend all the ingredients for the crust in the food processor till the mixture comes together. It's best to start with the almonds and pulse till it's powdery.

2. Rub pie pan with a little oil to keep pie from sticking.

3. Press mixture into the pie pan (just like a graham cracker crust).

KEY LIME FILLING

4. Blend all the filling ingredients till smooth. Pour inside the pie crust.

5. Place in freezer for 4 hours or longer (If you put the pie in the freezer overnight, make sure you put it in the refrigerator to let it thaw a hour or two before serving).

Hannah.hunnicutt's Thoughts

By hannah.hunnicutt

This is a perfect pie for the hot summer: cool and crisp!

Warning--it's hard to stop eating once you have had a bite. So make sure you prepare enough. (:

OMG, I just finished making this and I do NOT want to share it with my friends tonight. :) This is amazing and addictive. I want to try this with oranges now. Hannah thank you for submitting this, food like this makes me keep on with RAW foods.

Stupid question...is that supposed to be one and 1/4 cups of lime juice? It sounds like a lot, but if that's right, I'll take your word for it. ;)
