Ingredients
400g buckwheat , soaked overnight
120g flaxseed (it can be replaced with chia seeds)
120g zucchini / courgette (100g)
1 small red onion chopped (You can skip it if you don’t like it. You can add avocado or red bell instead)
1tbsp olive oil (you can also use avocado oil)
3tbsp sunflower seeds
2tbsp chopped parsley
Recipe Directions
Soak the buckwheat overnight in water, and then rinse them well.
Put the soaked buckwheat into your food processor and process until mix is at least half smooth. Add the flaxseed, zucchini, the onion, oil, parsely and the sunflower seeds and process everything until smooth and doughy.
Spread half the mix onto onto each of two dehydrator trays, covered with Teflex sheets. Spread to about 8mm thick.
Dehydrate for about 2 hours, then flip the bread and remove the Teflex sheet.
Dehydrate for another 3-5 hours, for a total of 5-7 hours, until the bread is soft but firm.
Cut each sheet into pieces ready for making sandwiches, or whatever size you prefer.
