Ingredients
1 15-oz. chickpeas, rinsed and drained (after they’ve been soaking in water overnight)
2 tablespoons lime juice
1 small clove garlic, peeled
Sea salt and freshly ground black pepper, to taste
½ cup peas, thawed
2 tablespoons chopped fresh basil
2 tablespoons finely chopped fresh parsley (optional)
1 teaspoon lemon zest
Recipe Directions
In a blender or food processor combine chickpeas, lime juice, garlic, and ⅓ cup water.
Cover and blend or process until smooth. Season with salt and pepper.
Add the remaining ingredients; cover and process just until nearly smooth.
Chill, covered, until ready to serve.
