this is one of my mothers recipes, i grew up on this soup. to my surprise, its even better raw!

serves 2-3

Ingredients
3 zucchini
1 pear (ripe)
1 carrot
½ red onion
1 teaspoon raw ginger (optional)
1 clove garlic
1 tablespoon pesto (or bunch of basil)
mint leaves to top
1 dash cayenne pepper
1 cup spinach
½ cucumber
3 stalks celery
Recipe Directions
blend with water till you get desired consistency. i like it chunky, but if you like a creamier soup, i suppose you can add 1/2 an avocado. garnish with mint leaves & olive oil (optional)

so glad you enjoyed it, pundee! its even better the next day (dont crucify me for that) but the flavors really do blend nicely once it sits for a while!
