Yield
2-3 bowls
Ingredients
2 medium tomatoes
½ avocado
¼ cup sun-dried tomato (soaked until soft)
1 clove garlic
Handful of cilantro
1 tablespoon chili powder (or to taste)
1 teaspoon ground cumin
½ teaspoon salt
½ red pepper (diced small)
½ green pepper (diced small)
¼ cup green onion (chopped)
½ avocado (diced large)
½ tomato (diced)
Handful of cilantro (chopped)
1 tablespoon olive oil
1 teaspoon lime juice
Dash of salt (or to taste)
Recipe Directions
1. Puree tomatoes, half an avocado, sun-dried tomato, garlic, and one handful of cilantro in a food processor until pretty smooth. Blend in spices. (I had to add a lot of chili powder to get this spicy, but be sure to taste as you add. Chili powder may vary.)
2. Mix peppers and green onion in a bowl. Add in puree and give it a good stir to blend.
3. Mix in the other half of the avocado (diced), half a tomato (or a whole one if you wish), and chopped cilantro.
4. Add olive oil and lime juice. Stir that baby real good. Add a little more salt if it pleases the palate, and you’re done! Bon appetit!
Starjen42's Thoughts
By starjen42 A chunky chili with veggies and no beans.
Very tomatoey with a nice crunch from the peppers.
Smooth and creamy from the avocados.

Veggie Chili
It was greatI even though I didn't have any cumin. I used a bit of chopped onions instead of green onions. I didn't have lime juice so I used lemon juice. I had green peppers but no red peppers. I forgot to add olive oil. I used 3 tomatos instead of 2. And I used 2 small avocados instead of 1 regular size.

Veggie Chili
This was the first recipe that reassured me that eating raw does not mean that you have to skip out on flavor, texture or try to find weird unheard of foods to add to recipes to make it good. It is prefect.

Made this about a month ago for my teenagers and they loved it! It is a new family fav. I used a friend's home grown tomatoes last time and it was unbelievable! We like it spicy, so I add more chili powder. Thank you for the inspiration.

I tried it. I liked it. *smile* Shared some with my boss. He liked it. Shared some with my dad. He liked it. This was my first time using cilantro so I thought I was supposed to grab a handful and THEN chop it up. Obviously I ended up with way too much. Thank God you told us to taste as we stir stuff in...LOL Now I have all this leftover cilantro. I'm SO GLAD you shared this recipe. I can't remember the last time I had chili. I even wrapped it in a sprouted tortilla with some guacamole.

As previously stated AMAZING! Thank you SO SO much for this recipe! I added a tiny bit of jalapeno for some extra zing. It is great at room temp and has a unique warming and cooing effect!

I just made this-- it is soo good! I was never even a chili fan. I added a handful of spinach to the puree to get some more greens in and a clove more garlic because I can never have too much. It's very filling and satisfying. I can't wait to make it for my boyfriend. Many thanks!

oh, i also pureed half a cucumber in the chilli, and diced the rest in, it was amazing. Also, careful on the chilli powder, i dont know how potent all of yours are but i grind chillis myself and make my own, that kind of lapsed my memory while i was making it, and a tablespoon was crazy hot. so be careful. hahah
