Served our family of 4 for a meal - would serve more as a side.
Ingredients
1 pound Spinach Greens, rinsed
1 Red Onion, thinly sliced
1 Cucumber, thinly sliced
1 Orange, peeled and segmented
3 tablespoon Vinegar
.33 cup Cold Pressed Oil
¼ cup Fresh Cranberries
1 tablespoon Mustard, Not raw, I know, but a very minute amount so I use it
½ teaspoon Each of salt and pepper
2 tablespoon Water
.33 cup Orange Juice, unpasteurized or freshly squeezed
1 Handful of crushed raw walnuts
Recipe Directions
Rinse spinach and place in a bowl. Add thinly sliced red onion and cucumbers. Peel and segment the orange (you can slice the segments smaller if you’d like). Toss together to mix.
Put all dressing ingredients in a blender and blend until smooth and creamy.
Pour vinaigrette on salad, mix and top with walnuts.
Enjoy!

I just thought of this, to stay raw on the mustard try soaking and grinding up some mustard seeds. I haven't tried it yet, it might work.

Looks like this is going to be a yummy salad, thanks! But i think that it could use a little more detail in the preparation part for us raw dummys! LOL!!
