Ingredients
¾ cup chickpeas or chickpea sprouts
2 clove garlic, crushed
1½ tablespoon lemon juice
1½ tablespoon orange juice
2 teaspoon cumin, ground
1 pinch cayenne pepper
¼ cup extra virgin olive oil
1 pinch sea salt
2 oranges, skin & pith removed and finely sliced
4 cup baby spinach leaves (English spinach)
1 large, ripe avocado, pit & skin removed, cut into chunks
Recipe Directions
Mix together garlic, lemon and orange juices, cumin, cayenne and olive oil. Season to taste with salt and pepper and set aside. Place chickpea sprouts, orange slices, spinach leaves and avocado in a large bowl and gently toss together with dressing.
