Ingredients
½ cup dried wakame
1 cucumber, seeded and chopped into small bits
1 red bell pepper, seeded and chopped into small bits
1 avocado, seeded and chopped
Recipe Directions
In this order, add cuke into a bowl, then the red bell into the bowl, then the avocado, then the wakame. Stir everything up and you’ve got a beautiful, colorful, cooling, summer salad with some salty, sweet, and crunchy bits. Yipeee! Wasn’t that easy??

By jeanniebellSo this salad is suuuper easy (only need a knife for the choppin’), and the flavors and textures combine really well. I eat this one at least once a week during the summertime. It’s also nice to take to raw potlucks as you can whip it together in no time (if you do, just double the recipe and make sure to add the wakame after you get there, in order to maintain the crunch). Enjoy!

Mmmmm...that sounds so good and refreshing -- can't wait to try it. Thanks for sharing. I went to a raw food potluck last night here in Cincinnati and took another recipe from this site: Sweet Potato Casserole. I think I'll take your recipe to the next one! :-)

I don't know what happened to my comment above. I must have hit some weird key that created lines through the rest of my text. It should have read: can't wait to try it. Yeah, wakame seaweed usually comes dried in small bags (I've seen both raw and cooked), and you can usually find it in the "ethnic" foods section at the market.

What is wakame? I have never heard of or seen this (yet).
