Ingredients
4 Golden Beetroot, Peeled & Diced
4 Jerusalem Artichoke, Peeled & Diced
1 cup Pinenuts
4 clove Garlic
1 Lemon, Juiced
3 tablespoon Olive Oil
Fresh Parsley
Pepper, Cumin & Coriander Seeds, Ground
Celtic Salt
Recipe Directions
Place everything in Food Processor (except olive oil and lemon juice), mix until it reaches a course consistancy, then add olive oil and lemon juice and mix for a few more seconds. Serve on a bed of lettuce with some avocado and sun dried tomatoes.
Change quantities of garlic, lemon, parsley & spices to taste.

Tastes pretty good without the jerusalem artichoke, I only add them when they are available.
