Ingredients
2 cups mixed greens
¼ cup fresh cilantro
¼ cup fresh fennel (thinly sliced)
1 ear of fresh corn (cut from cob)
2 sliced peaches (I used Saturn peaches)
2 fresh apricots (sliced)
1 cup green grapes (sliced in half)
½ lime (juiced)
Recipe Directions
1. Add all ingredients to a large salad bowl.
2. Squeeze lime juice over the top.
3. Gently toss to combine.

By LibbyB After indulging on far too many nut-based and dehydrated raw goodies, I found it time for a week of detox.
This salad has become my very favorite fresh treat!
*Any stone fruit (plums are nice!) can be used in place of, or in addition to, the peaches and nectarines.

I would have to leave out the cilantro for mine, though...
but I love fennel!

this looks lovely. very sunny shame the weather is rubbish here :( but im sure when i make this the sun will come out :D
