Makes a very very large amount. I usually cut the recipe in half to bring to parties and even smaller for just myself. -

Ingredients
2 head Red Cabbage, Grated with a mandolin
1 cup raw sugar
½ cup raw apple cider vinegar
1 teaspoon sea salt
1 lemon, juiced
Recipe Directions
Mix all ingredients except cabbage in a separate bowl. While that’s sitting after you’ve mixed it, shred the cabbage with a mandolin or by hand if you don’t have a mandolin. After you have your cabbage shredded, pour the mixture of the rest of the ingredients over the cabbage and let it marinate overnight or even for a couple nights (it gets better the longer it’s in the fridge!).
Refreshing (bright purple) salad goes well with raw hummus or along side a raw sandwich. Feel free to add shredded green cabbage, carrots, onions, or whatever else you’d like to make it more like a cole slaw type dish.

*edit* I made this tonight and I tweaked your recipe and it came out SOOO good. Again, thanks for posting. I got a really course sugar, to coat the cabbage and create some texture, apple vinegar, ginger, and raw agave and made a really good sweet/tangy suace. It would have been a little better w/ some orange zest but I did nto have any oranges. :)

I really do miss the flavors of sweet and sour since going raw and purple is my favorite color. Does the sugar/vinegar become sort of sticky on the cabbage(a good thing)?
