Soup for one :-)
Ingredients
1 red capsicum
1 clove garlic (2 if you love it)
1 fresh Medjool date
½ cup pumpkin seeds
1 teaspoon chili powder or 1/4 fresh chili (finely chopped)
1 cup water
1 tablespoon apple cider vinegar
Recipe Directions
1. Put all ingredients, except the apple cider vinegar, in a blender and go for it.
2. Add more dates and water to adjust sweetness and consistency.
3. Pour into a bowl or jar and then add the apple cider vinegar.
4. Stir it around and add more if required. Yummmy!

This is a sweet and cleansing soup, perfect when you are craving something highly tasty.
Feel free to add more Medjool dates to increase the sweet element, and less pumpkin seeds for a lighter soup.

what is red capsicum? I have never heard of it before (which is no surprise here with the variety of produce we have here in Montana!)

oh! Perhaps you call them red peppers or bell peppers? I am from New Zealand so we probably a different name for them. They look like bloated chilli peppers and are sweet, not spicy at all.

Kirsty:) If it makes you feel better - we dont have vitamix blenders here in New Zealand. My flatmate and I have a super cheap blender that does the trick nicely! I hope the universe sends you a lovely blender:-)

This was very nice! I used half the pumpkin seeds and added half a large avocado and it was soooo creamy and good.

Kirsty:) If it makes you feel better - we dont have vitamix blenders here in New Zealand. My flatmate and I have a super cheap blender that does the trick nicely! I hope the universe sends you a lovely blender:-)

reeeeally wish i had a blender to make this. i LOOOVE soups.... i dont know how much longer i can keep seeing these yummy recipes that require a GOOD blender or a food processor without goiing out and buying them BOTH (definitely cant afford it right now) boooo :'(...... this looks super yummy though. i'm gonna keep it in mind for when i DO get the right equiptment!!!

oh this sounds delicious! I have been a fan of roasted red pepper soup for so long and here is a lovely sounding alternative.
