4 cups
Ingredients
2 medium carrots (grated)
1 large zucchini (grated)
1¾ cups pepitas (ground)
1 basket of cherry or grape tomatoes (cut in halves)
2 large jalapenos (minced)
1 orange bell pepper (diced)
1 large shallot (minced)
Handful of cilantro (chopped)
2 limes (juiced)
½ tsp cumin, chili powder, and garlic powder
¼ tsp cayenne
Drizzle of Bragg's aminos
Drizzle of apple cider vinegar
Recipe Directions
1. Combine zucchini, carrots, pepitas, and spices. Toss.
2. Add remaining veggies, cilantro and lime juice. Toss.
3. Drizzle Bragg’s and Vinegar a bit at a time to taste. Toss. Serve how you like’em.

Prefer the middle of a head of romaine for “boat” tacos or the outside of big leaves for rollups.

You could chop the zucchini instead of grating it. That could make the mix heartier without the seeds. My guy wants to try cactus in it.

OH MY! I had this last night for dinner and it was great. I didn't have a grater (go figure) so I used a pealer and then chopped everything really fine and added some mushrooms to it. The flavors of the jalepeno, cumin and chilli powder were to die for (heat is the best).I LOVED THIS DISH! Thank you so much!!

Very yummy! I used less pumpkin seeds (just because I didn't have that many) and bulked it up with half an avocado and some overripe sweet plantains...yum!

This looks great, but, I am trying to limit fats, which includes seeds as well as nuts. Anyone have any suggestions?
