Ingredients
- 1 1/2 cups cashews
- 1/2 cup water
- 3 tablespoons coconut oil
- 2 tablespoons honey
- 1 tablespoon pure vanilla extract
- 1/4 teaspoon sea salt
Recipe Directions
- 1. Throw all ingredients in high-speed blender.
- 2. Blend until nice and smooth and creamy!
- 3. Transfer to a small bowl.
- 4. Refrigerate in bowl for one hour until it firms up.
- 5. Spread on your favorite raw cake, like this raw carrot cake recipe.

The icing will get softer and more gooey (gooeyer?) once it warms up so it's best to ice and then eat right away. Or store your entire cake in the fridge and then cut slices right away.

OMG!!!! Just made this recipe and I swear it almost didn't make it into the dehydrator! It is SOOOOOOO yummy!!!!! Thank you for sharing all that you do. Oh ...forgot to mention I didn't have quite enough carrot so I added some pineapple to make up the rest...oh ya!!!!

That is a great Idea Leonie. I think I will be surprising someone with this on Valentine's day as well. and this icing looks delish.. the only addition I would make to this is a quick squeeze of fresh lemon juice to give it that cream cheese "tart"ness. Thanks for these inspirational recipes. I was wondering though, where you get your raw cashews from? and do you soak and rinse yours before using them??

I don't really soak - I know I should but I am busy and lazy.
When it comes to my recipes, if I say "soak" it means you HAVE TO SOAK to get the recipe to work properly. However, that is not so with this recipe :) In other words, NO, you don't have to soak if you have a high-speed blender.
(If you have a crappy blender you should soak in warm water just to soften them so they will blend better.)

I just read recently that cashews are one of the few nuts that you do not need to soak because they do not contain the enzyme inhibitors that some nuts have. :)

Hi Katrina..my local Health Food store sells raw cashews as well as Trader Joe's. I always soak my cashews for a few hours before I include them in recipes 1) because it breaks
down the enzyme inhibitors..and 2) they whip up much creamier once they are soaked and rinsed..hope this helps.
