Raw creamy carrot soup recipe
This raw creamy carrot soup uses cashews as the cream base. It tastes surprisingly like traditional soup - but without the dairy. A blender is required.

- 1 cup chopped carrots
- 1/3 cup cashews
- 1/3 cup water
- 1/2 teaspoon sea salt
Recipe Directions
- 1. Throw all ingredients in a high-speed blender and blend up 'til nice and smooth and well mixed. You can let the soup blend in the blender for a little extra time so that the heat of the blades and the friction actually warm up this delicious, creamy raw soup. Blend until very creamy and smooth.
- 2. Transfer raw creamy carrot soup to a bowl.
- 3. Garnish with whatever you like! I simply sprinkled my soup with pepper and a tiny carrot garnish. Eat immediately.

This recipe is super simple and requires only a blender to make.
It's also very quick to pull together if you have carrots in the fridge, as well as some cashews in the cupboard. And really, who doesn't have carrots lying somewhere in the fridge? They last for a long time and are quite inexpensive. And you should always keep some spare cashews around!
It usually takes about 2-3 carrots to make 1 cup of chopped carrots.
This raw carrot soup recipe makes a nice big bowl for one person. :)

Raw creamy carrot soup recipe
I think I've put too many cashew nuts as it turned out a bit too sweet, more of a carrot cake taste rather than soup. Solved it on the spot with black pepper and pickles, although next time will keep a closer eye on how many nuts I put.

I'm never going to be afraid to try your soup recipes again. I remember reading the mushroom soup and thinking "just mushrooms, water, & cashews with some salt? Umm... Well, it's got some rave reviews so I guess it wouldn't hurt to try it". I fell in love with your carrot soup just like I did the mushroom soup. Further comfort that as long as I have cashews and some veggies on hand I will always have a quick supper!

What do you know!? I happen to have a lot of carrots in my fridge! lol I might make it to take for lunch tomorrow. My mom used to make a (cooked) carrot soup. It had squash in it too, but I'm hoping since I loved it so much I will love this like your other soups I've tried. :-)

I wanted to avoid nuts and wanted some other flavours so added 1 clove of garlic, a tiny bit of ginger and a bit of onion, along with the salt, so I can't really view this recipe at all. But the carrot, blending and salt, all great.
Thank you for the idea! Didn't think it would be so easy to have a lovely raw dish.
