Ingredients
- 1 cup cashews
- 2 cups water
- 2 tablespoons honey or agave nectar
- 1 tablespoon vanilla
- 1 teaspoon cinnamon
- 1 pinch sea salt
- 1/4 cup chia seeds (reserve)
- 1/4 cup raisins (reserve)
- 1/16 teaspoon pure almond extract (optional)
Recipe Directions
- 1. Put all ingredients (except the chia seeds and the raisins) in a high-speed blender and blend until smooth.
- 2. Place chia seeds and raisins in a large bowl. Pour the blended mixture on top of the chia seeds and rasins, mixing slowly and thoroughly.
- 3. Cover raw rice pudding mixture and refrigerate for at least one hour. The purpose of refrigerating and letting the mixture sit for at least an hour is to allow the chia seeds to absorb the liquid. (Chia seeds are similar to tapioca. They increase in size!) Ideally, let this recipe sit in fridge for 3 hours. Overnight is even better!
- 4. Stir thoroughly before serving.

Oh dear, another raw rice pudding recipe. I am starting to get a reputation as the type of girl who only eats chia pudding, lol.
Well, since I've discovered this raw rice pudding, the fact is true. I don't even need to leave the house as long as I have a batch of this old-fashioned rice pudding on hand!
This recipe really does taste like the traditional rice pudding that you may have had as a child growing up, complete with the plump raisins.

Hi! I just got into raw food recently, i'm living in India which sometimes makes it more difficult as many things are not available here. But wanted to know if you actually ever heard of Poha ? It's rice flakes out of raw rice which you just have to soak to become soft and eatable. Not sure if you get them in america, but probably in indian shops. Just wonder why no one is using Poha in their raw food recipes..

Better to use white chia seeds.(salba).only because of color,more ricey.:-)

Hi rawtarian, hey I made ur delicious rice pudding its amazing u always hit the notes congrax!!! Then I made it again but I upgrade it, I added unsweetened shredded coconut, n a little bit of lime zest after I blended the originals ingredients uffff thant came out delicious..... if u want to try nutmeg powder instead or lime zest this one go perfect with it too... Hey rawtarian U r the best!!!!

I can't wait for this to cool down and plump up...tasting the mixture straight from the blender, I was already sold :)
Oh, and I blended half of the raisins and put the other half in whole so that every bite will have a little raisin-y goodness.

I have been eating this a lot lately. I went to make it as usual this morning and realized I was out of raisins. I threw in 2 medjool dates, and then realized later I had forgotten to add the honey. I did add some cinnamon, though. It turned out really good.
