Makes about 2 cups depending on size of vegetables -

Ingredients
1 cucumber, diced
1 tomato, diced
1 small onion or a couple scallions, diced
1 teaspoon sesame seeds, black looks pretty, sprinkled
¼ cup green olives, sliced
pinch sea salt
1 tablespoon sunflower seeds or pine nuts
1 tablespoon olive oil
pinch dry mustard powder
2 teaspoon cider vinegar
Recipe Directions
Amounts are a bit of a guess since I usually “cook” by intuition.
Try to dice everything the same size. I usually seed the tomato so there isn’t as much liquid in the bowl.
Whisk the vinegar and oil together with a pinch of dry mustard until blended.
Toss all the ingredients together until just mixed up.
I don’t know the status of vinegar, but you could probably sub raw lemon juice. The green olives aren’t raw, but they really add something nice here.
