Ingredients
3 cup Kale, chopped
2 cup carrot, grated
½ head, red cabbage, shredded
¼ cup pumpkin seeds
¼ cup sunflower seeds
¼ cup olive oil
.33 cup Bragg's or Nama Shoyu
5 tablespoon balsamic or red wine vinegar
1 teaspoon dried oregano
Recipe Directions
Chop/grate veggies and add to a large bowl. whisk together dressing ingredients and pour over salad. let stand as long as possible (2 hours is optimal but i can never wait that long!) for flavours to come together.

This salad come from the Planet Organic grocery store deli in Canada. I loved it so much but at $5 for a small container, I knew I had to make it myself. I am only 95% raw so I use balsamic vinegar, but raw red wine or apple cider vinegar would work as well.

Yum! So far every variation on the kale salad theme that I've tried has been rockin' good. This one sounds like a winner too! :o)

Kale salad is our FAVORITE thing, and adding the pumpkin seeds and sunflower seeds is great idea. Guess what???? Add a good drizzle of pumpkin seed oil with that olive oil and it REALLY takes it over the top! Thank you!
