Ingredients
1 head kale, finely sliced
1 small tomato, chopped
2 tablespoon red oignon, finely chopped
2 tablespoon sun dried black olives, chopped
1 avocado, small pieces
1 lime, juiced
2 tablespoon raw pine nuts
1 teaspoon cumin powder
salt & pepper to taste
olive oil to taste
Recipe Directions
Mix all together and let marinate at least 10 minutes at room temp I left it 30 minutes.Fresh cilantro instead of cumin powder would have been great.Skip the salt if your olives are salty. Bon Appetit!

South of the border Kale salad
This is a yummy kale salad. I made it last night and ate it in two sittings, I could have eaten it all at once but I had an audience!!! Seriously, this is going to be one of my go to's for kale from now on. Thanks.

This looks great. Been to a cooking class with Melissa at the Terra Bella. She suggested massaging the oil and lemon juice into the kale until it is very soft, almost like wilted spinach. Worked wonders on the Kale salad she served.

I know remember, tachelet, seeing the host massaging her kale as well in a Rawtopia video recipe a while back she said that it rendered the cancer fighting agents more active :-)

it is also very good next day, or day after... if you still have it; for the same reason as 'massaging' it. i also add very little shreded cabbage, gives a little different texture
