Ingredients
4 cup boston lettuce
2 cup spinach
1 cup fresh parsley
¾ cup cashew yogurt
2 tablespoon lemon juice
sea salt and black pepper to taste
2 cup veg stock
Recipe Directions
Blend all ingredients in a blender and then serve.

This looks tasty. I just looked up boston lettuce...is this the same thing as butter lettuce? Also, how does one make cashew yogurt? Thanks!

I had an excess of lettuce so I decided to try this recipe to use up some of it. It came out really well, but I did substitute a bit. I only used soaked cashews instead of cashew yogurt (I'm impatient), and I didn't have veggie stock so I just used some miso and water. This soup came out a lot creamier than I expected, but very delish! I'd recommend shredding some lettuce and adding it in afterwards to add some texture.
Oh, and I also threw in a couple garlic cloves, some onion, and some red pepper to give is a little more kick. I think it'd also be good as a salad dressing!
