Recipe Directions

1. In a food processor, process sprouted quinoa, salt, and lecithin into a powder. If there is still moisture in the sprouted quinoa, it will process into a dough-like mass.

2. Place quinoa mixture into a bowl. Set aside.

3. In a food processor, process peanuts into peanut butter. Add agave and vanilla and process to mix.

4. Add the quinoa mixture to the peanut butter mixture in the food processor; process until the mixture forms into a ball.

5. Freeze dough for an hour. Take a rolling pin and roll out dough into desired cookie shapes.

6. Dehydrate for 4-5 hours turn and continue dehydrating for 4-5 hours or until cookies reach the consistency you prefer.

7. To heighten the peanut flavor, I added raw peanut butter between two cookies.

The cookies alone have a subtle peanut taste.

Not only are these healthy, "good for you" cookies, they are filling, so one goes a long way.

At room temperature, the dough can be sticky and not easy to handle. I hope you enjoy these cookies!

greenie - great suggestion - A raw jam would be fantastic. I thought to dip them in cacao but... maybe next time. A sub for coconut oil? I'm not sure about this but you might try flaxseed oil in place of coconut oil.

rawclaire - I purchased the raw peanuts at BJ's Health food store, California.

angie - As individual cookies on its own they have a very light peanut taste. This is way I whipped up raw peanut butter and made them into sandwiches. I hope your son will enjoy them. Hum, I'll have to order wild jungle peanuts, thanks for the tip. Oh and I'll check out both your Dipping Chocolate recipe + Blueberry Jam. I love blueberries!

Do you have a suggestion for something besides coconut oil? I love cocos but don't like the oil. I always feel like I'm eating sunscreen.

rawclaire, www.sunfood.com has wild jungle peanuts that don't have the aflotoxins associated with all other peanuts. They are WONDERFUL!!!

nyuszi, my son has been wanting me to make peanut butter cookies. Thank you for the recipe!

greenie, look up my Dipping Chocolate recipe or my Blueberry Jam recipe - that does sound good! I have been using my dipping chocolate (left at room temperature) as a frosting for all kinds of stuff since my friend said it looks like frosting.
