Makes 4-5 burgers to serve 2-3 people.
Ingredients
2 cup soaked almonds
2 cup soaked pepitas (pumpkin seeds)
½ cup scallions
1 cup fresh cabbage
1 cup fresh parsley or dill
1 clove garlic
1 pinch black pepper
1 teaspoon coriander seeds
1 teaspoon salt
2 tablespoon oil
1 tablespoon nutritional yeast
1 tablespoon oregano (optional)
1 tablespoon majoran (optional)
½ cup filtered water
2 tomatoes
1 cup mushrooms
6 slice cucumbers
1 pinch sesame seeds
kale or other green leafy vegetables
Recipe Directions
1. Mix almonds, pepitas, salt, pepper, water, yeast, oregano, majoran, coriander, oil in your blender. Add shredded cabbage, chopped parsley and scallions to the mass.
2. Form into round bread-like patty (make even number of them for later couples, sprinkle with sesame seeds, and Dehydrate for 20-24 hours at 115 degrees.
3. Dice tomatoes, marinated mushrooms (overnight), cucumbers, put some kale or other greens. Serve on 1 patty and press with another. Bon appetite!
