Ingredients
1 cup Cashews, (Soaked overnight)
1 Lemon (for the juice)
1 Handful of Delicate Spinach Leaves, (No stems)
1 sprinkle Celtic Sea Salt
1 dash Water, (Only as needed, to blend)
1 Tomato (sweet and juicy), (Sliced to desired thickness)
1 Bunch of Light-Tasting Leafy Greens, (Iceberg? Leaf Lettuce?)
Recipe Directions
Blend cashews and sea salt – using water only as necessary to blend until smooth. Blend in spinach leaves – just enough to achieve the look in the attached photo. Lightly blend in lemon juice. (The lemon juice appears to be what kicks in the BACON flavor.) Adjust to taste. Slice, layer and dollop. Enjoy! :o)
P.S. The leafy green in the photo is kale, which has a strong flavor and was all I had on hand. But I don’t recommend it as it dulls the BACON flavor a bit. I’m guessing you’ll love the light and tasty leafy green that you already love on your BLT!
P.P.S. I soaked my cashews in the fridge, a little longer than overnight. Then I drained them and stored them in the fridge a little longer, too. Now I don’t know if that contributed to the result, but FYI in case it did.
