3 sliced tomatillos
½ cup cucumber
¼ cup cup parsley
2 limes, juiced
1 drop essential oil of oregano, or fresh to taste
celtic sea salt, to taste
Pulse all ingredients for a chunky salsa. Tomatillos are found in Mexican markets. They look like small green tomatoes, wrapped in a brownish paper-like covering. To use, remove outer coating and rinse inner green fruit.
