Just grind up macadamia nuts in a food processor or coffee grinder (but don't let it turn into macadamia butter).

Let me know how your mother in law likes it! Date paste is just ground up dates with a little bit of water in it (if necessary).

I am having my first vegan "tea" on Friday. These shortbread cookies will be on the menu. Can't wait to try them!

My FP isn't the greatest, so I had difficulty making the macadamia flour! If anyone has suggestions on how to make a fine flour with a not-so-powerful FP, I'd love to hear it! I might try the Vitamix next time, but I'm afraid to get macadamia butter!
The taste is very good, by the way - but my FP challenges meant the consistency was not right.

I haven't tried making it in a stoneware shortbread mold. I made mine in a bread pan, it being the only squarish baking dish available.

Has anyone tried making this in one of those stoneware shortbread molds? Just wondering how well it would come out of the mold and retain the impressions.

You can just make your own with a food processor. That is probably the easiest way.
