Ingredients
1 mature coconut (processed into rice sized bits)
1 ripe mango (peeled, sliced)
1 cup macadamias or almonds (soaked overnight)
1 teaspoon vanilla or vanilla bean
1 cup water, coconut water, or orange juice
2 tablespoons agave or to taste
Recipe Directions
1. Grind coconut in whatever you have to make rice sized bits.
2. Peel and slice mango and arrange over coconut.
3. Make sauce by blending soaked nuts, liquid (water or coconut water), syrup, and vanilla until smooth.
4. Drizzle this over mango and “rice.” Decorate with sesame seeds and viola!

I love Thai food, and mango and sticky rice is one of my favs, so i had to make a raw version for myself.
If you hate coconut, maybe use the nut pulp from the sauce making?
The texture would be a bit dry then, but if you mixed the sauce with the pulp, it would be close.
In the non-raw version, it's Thai sticky rice.

This recipe looks fabulous! Can I also use cashews in place of macadamias with a similar flavor/ I might also try a very sweet ripe banana blended in place of agave for a truly tropical sensation! Maybe some juicy chopped papaya with the mango and coconut, too! Yum!

This sounds really good. I would probably add red pepper and cilantro but I would have never thought of this so thanks a lot!.
