Ingredients
COOKIES
1 cup carrot pulp (from juicing)
1 cup rolled oats
1/2 cup honey
1/4 cup coconut flour
1/4 cup fine coconut flakes
1/4 cup coconut oil
1 teaspoon cinnamon
1 teaspoon vanilla
1 cup raisins
COCONUT FROSTING
Flesh of 1 young coconut
1/4 cup honey
1 teaspoon vanilla
Recipe Directions
1. Blend all cookie dough ingredients except raisins until well mixed and forms a ball (or gets sticky-ish) and then blend in raisins for two or three seconds more, but not enough to pulverize them.
2. Form into balls and squash into patties.
3. Dehydrate for 2 hours on a fine mesh sheet.
4. Blend frosting ingredients in a processor or Vitamix until smooth.

By Wild and FreeI made this up today. It's really tender like a warm soft cookie! Also not overly sweet.
I wanted to figure out something else to do with the carrot pulp from juicing; hence this cookie was born. :)
