Makes about 8 slices
Ingredients
2 small apples (grated)
1 carrot (grated)
1 cup dried fruit puree
Pinch sea salt
2 teaspoons cinnamon
1 teaspoon mixed spice
2 cups flax meal
1/2 cup raisins (dry or soaked)
Recipe Directions
1. Soak 1 cup of dried apricots, figs or dates in warm water for a few minutes. (You can do a mix of all these) Blend the fruit until you have a thick puree.
2. Grate the apple and carrot and place in a bowl. Add salt and spices. Mix in the puree and add the raisins. Now add enough flax meal until you have a mass of dough that resembles a loaf of bread.(it can be slightly damp, as long as you can lift it up and place it on a board in one piece) You may need to use more flax meal than stated in the recipe.
3. Flour a board with some flax meal and shape the loaf into an oblong shape. Slice thinly and place the pieces on a non-lined mesh tray in the dehydrator at 145 for 45 minutes. Turn the bread over and continue drying at 115 for a further hour or so. Longer drying makes it more ‘toasty’.
Makes a great breakfast or tea bread.
Eat straight out of the oven warm with melted coconut oil and honey if desired.

I am making this tomorrow with left over carrot pulp!! My kids ate all of our apples today and I don't feel like going to the store AGAIN for the third day in a row...so I think I will try something else....hmmm...I have fresh figs from my massive tree outside and I also have a nectarine and peach tree that are loaded. I think I will try some one of these. I think I will have to add lot more flax to make up for the wetness. I will let you know! Thanks for posting this! Looks yummy!

Ok...I've made these again...double batch! The non-raw in-laws like them the way I made them. Thanks for the basics of the recipe! I used 3 Fresh Figs and 1 fresh sqeezed orange juice in the Blendtec, a pinch of ginger, left over carrot pulp, and no other fruit besides the raisins. It tasted fantastic. I added about 1 Tbls of Agave in the in-laws 'loaf of bread'. Tastes great warmed in the dehydrator. Very 'compforting'.

These are pretty good. A little dry after an hour in the dehydrator (go figure), so honey works well on top. I'll have to experiment with the shape...mine came out funny looking and therefore a little unappealing...even though they tasted good. Good recipe. Will definitely make again.

thanks everyone, I really had a magic moment with this one. It was just like eating toasted fruit cake with melted butter and honey.
Karategirl, I think you could keep this in the fridge for about 2 days. It really is best straight out the dehydrator on the day.
