I posted here looking for a gluten-free, fat-free bread alternative, and this is what I came up with.  

Recipe Directions

1. In a food processor, combine zucchini, bananas, and juice of one lemon. Puree.

2. Then stir in flaked oats and raisins. Not all oats are gluten free, so if you have Celiac you need to check that.

3. Spread out on fruit leather tray and dry at 95 Fahrenheit for 8 hours, then flip over and carefully peel off the Teflex.

4. Keep drying to desired consistency--maybe only 2 more hours if you want to keep it bendy.

They would be raw rolled oats. I can't get those here, but I have an inexpensive flaker, and can get either raw steel cut oats (which make small flakes), or I can order "hul-less oats" which are raw. Regular oat groats are often steamed to dehull them, and then aren't raw.

I've got all the ingredients, and plan to make this recipe this evening. Love the combination of zucchini (my favorite veggie) and bananas. Printed out my copy yesterday.

Interesting, now wondering how I might be able to turn this into a carrot and not banana variety.

what are "raw flaked oats"? oat groats? buckwheat groats? rolled oats?

I'm sure you could use carrots if you added some soaked flax. I wanted to make something with no flax, so the banana is what binds it together. But soaked flax would work- maybe 1/4- 1/2 cup?
