Raw 5-minute spaghetti recipe

Sauce keeps 1 day in fridge
Spaghetti Sauce
- 1/2 cup fresh tomatoes (chopped)
- 1/2 cup sun-dried tomatoes (chopped and pre-soaked in olive oil)
- 1/3 cup walnuts
- 1/4 teaspoon sea salt
Noodles
- 1 zucchini
Recipe Directions
- 1. Add both kinds of tomatoes and the salt to your food processor. Pulse briefly to incorporate. (Do not over-process, it's nice to leave this raw recipe a bit chunky.) 5 seconds should do it.
- 2. Add the walnuts, and pulse very briefly again. Perhaps 8 seconds will do it! You don't want to overprocess, since you want to leave the walnuts in a small, round texture -- similar to ground round or ground beef. (Sorry!)
- 3. To make your noodles, peel your zucchini (remove outer green peel).
- 4. Use a clean vegetable peeler (or a spirooli spiralizer if you have one) to slice zucchini into “noodles.”
- 5. Assemble and enjoy!
The Rawtarian's Thoughts

I love this version of raw spaghetti because it's so quick to make. The addition of the walnuts at the last minute give a lovely hearty texture without having to wait for dehydrated raw vegan meatballs.
Serve this with a fresh green salad for a satisfying meal that almost anyone will love -- raw or not.
Tip: Do not add the sauce to your noodles until you are ready to eat, because the sauce will cause your noodles to get soggy if combined too far in advance.
Tip: In order for this recipe to work well, you need to use sun-dried tomatoes that have already been soaked in oil for an extended period of time. (If you used dry sun-dried tomatoes, the sauce won't process well and it won't have the right consistency.)

As a novice vegan looking into raw, I am politely confused by this recipe. For the full spaghetti experience I would be very inclined to add: fresh oregano, basil, dried black pepper, finely chopped scallion and perhaps a little garlic powder to the tomato 'sauce'. And of course garnish with fresh Italian parsley as shown in the photo. So is there something about a raw dish that precludes it from having fresh herbs or dried seasoning?

Hi Kevin,
Welcome! I'm so glad that you found me in your exploration of raw food!
Here's the scoop: most of my recipes are BASIC and SIMPLE - and do not contain a lot of "extras" which could be omitted. This is intentional, mostly to help people (like I was) who are not very experienced with cooking - and to provide a basic recipe on which to jump off from.
Basically, this recipe is super simple! And it will taste great as is. I eat it like this all the time. No extras needed.
But BY ALL MEANS, I want you to garnish or doctor it up with whatever spices you think it needs, if you have them and want to use them. It sounds like you're very comfortable in the kitchen, so have at 'er and add whatever spices you want to add! They are not NECESSARY, but it's kind of similar to a recipe for ice cream: you can make the ice cream as is, or you can top it with caramel sauce, fruit, nuts, etc. You can take my recipes to whatever level you like!
Lastly, most of my recipes are very simple, which is by design. However, some of my raw food colleagues (like my friend Russell James, The Raw Chef, for example) have more complex, advanced recipes with more ingredients. His recipe style might suit better your palate!

Thank you for the great reply, I will look into the Raw Chef, I am definitely into much more complex creations, but with the basic raw food benefits intact.

I'm a regular carnivore and I think this recipe is EXCELLENT! I am very impressed. Best recipe on Rawtarian yet! I used jarred Mezzetta sun dried tomatoes. I did not realize the jar had Italian seasoning in it but it was even better now! When I go back to rehydrating in oil my own sun dried tomatoes, I will add a skinch of seasoning or edible essential oils for an Italian flare!
Oh, and on the second day, I added the marinated mushrooms and O.M.G! So good!

Oh my goodness!!! Coming from a french/italian family I've had my fair share of pasta and spaghetti and this was just sooooooooooo yummy! I am converted! Can't wait to make this for my dad! Thank you for making it so simple. I am living in a camper van and don't have a blender - I have a little hand held food blender so had to make a few changes but it still tasted so delicious- looking forward to trying more!

I love this! I didn't have sun-dried tomatoes so I subbed with more chopped tomatoes at the end for more texture. Also added in some fresh basil and italian seasonings. So so good and easy!

Love this recipe. It's hearty, tasty, easy...and i loved it...for dinner, for lunch...even my husband had it one night. Great with raw macadamia cheese. Made a "mozzarella" too which was great together with it. Made zuc and carrot spirals and chucked in some mushrooms too (one night soaked in tamari, one night fresh enoki mushrooms)...definitely on my to-do again list. thanks
