Ingredients
- 1 1/2 cups broccoli (chopped)
- 1/2 cup cashews
- 1/2 teaspoon lemon juice
- 3/4 cup water
- 1/2 tablespoon honey (or maple syrup or agave nectar)
- 1/2 cup more broccoli - finely chopped (reserve - do not blend)
Recipe Directions
- 1. Add all of the raw broccoli soup recipe ingredients (except the last 1/2 cup of broccoli) to your high-speed blender.
- 2. Blend in your high-speed blender. Start blending on low and work your way all the way up to high. Blend for a very long time so that the soup recipe warms up nicely from the speed of your blender.
- 3. Place your additional 1/2 cup chopped broccoli into a bowl. Pour blended broccoli soup mixture on top of the chopped broccoli. Mix gently with a spoon. (So you will have a creamy broc soup with some floating broc chunks, capiche?)
- 4. Serve immediately. For an added touch, garnish with thinly sliced avocado.

As you probably know, I have a lot of raw soup recipes. My favourite raw soup recipes are probably raw corn chowder and raw cream of celery soup or raw tomato soup - so if you have never made raw soup before try starting with those!
However, I was recently craving raw broccoli soup, and I made this simple recipe. It did the trick to satisfy my broccoli craving. But obviously you should only make this raw broccoli soup recipe if you actually like the taste of raw broccoli. :)
This raw broccoli soup recipe makes enough for one big bowl or two very small appetizer cups.

Raw broccoli soup recipe
I wanted this to taste good... but it tastes like liquid raw broccoli and I just can't even get it down. What on earth am I doing wrong? It really tastes nasty.

I notice a lot of the soups have cashews - I can't tolerate cashews. Can I substitute another type of nut/seed/ingredient. Thank you

I started blending several cups of kale, 1/2 avocado, some ginger, 1/2 apple and water. Oh yes and often 1 T of coconut oil. I then warm it. It is yummy. One day I had an 8 ounce bottle of Arden's Garden Juice which was pineapple apple ginger. I added it with the avocado, and lots of ginger. It was so yummy for breakfast.

Hi Jess, generally there are no subs for cashews. You could try 1/2 to 1 avocado for creaminess but I generally don't recommend substituting. You could try to find a recipe that uses avocado rather than cashews. Good luck!

What about Brazil nuts? Have you tried those before? I havent, just wondering if they'd be a good substitute

I would not recommend Brazil nuts as a substitute in this recipe. Brazil nuts have quite a strong flavor and can also be a bit gritty/pulpy when blended.
Macadamia nuts could work well though :)

If you love raw broccoli this soup is great! If you add a pinch of whole or ground mustard seed it adds a really nice dimension to the soup.

Hi made this recipe today!
It's great, the only thing I dont like is the fact after a couple mouthfuls the taste of the soup (vegetables) becomes tedious but I guess it could be complemented with another snack to minimize this situation.

Hi Edna! Definitely best to combine it with something else, I agree. Soup and salad is easy, or with crackers is nice too.

This is a beautiful soup, the only thing I would change is to halve the amount of sweetener. A lovely light and healthy soup.

I had to make this as soon as I read recipes and comments. It was so filling and delicious! I Didn't add honey just the agave and I also added a pinch of chili pepper and a splash of lime juice also :) I just started introducing myself to the raw food diet this last week. Since I started, this has been my most favorable recipe. Thank you for sharing!

Loving your recipes. I notice a comment about soup for breakfast... I eat all your soups for breakfast. I am finding it a challenge to drink green cold juices on winter mornings... so hot filling raw soups are perfect!! I still add in my chia seeds, pre & pro-biotics etc... so I am on the band-wagon.... soup in the vitamix for brekkie beats toast or cereal any day!

Hi Lorna, you are the bomb! I don't think I could do soups for brekkie. I am too much of a sweet morning person! Well, I am cranky in the mornings, but I like sweet breakys for get me out of my funk lol

Hi, I tried this with a slightly different twist....I love your site and so glad you have it. Very helpful. Here is my recipe: Here is my first modified raw recipe.
1 Tablespoon of red onion,
1 garlic clove, (natural antibiotic)
1 Tablespoon of Sundried Tomato,
3/4 cup of Coconut Milk,
1 cup of Broccoli, (super food)
1/4 teaspoon of Turmeric spice, (anti cancer spice)
1/4 teaspoon of Sea Salt and
blend together and enjoy.
