Recipe Directions

  • 1. Place all dry ingredients in a large bowl and stir.
  • 2. Add remaining ingredients and stir gently with a spoon.
  • 3. Press mixture FIRMLY down into a large dish. (I use a large brownie pan.)
  • 4. Cover and freeze for at least 1 hour.
  • 5. Bars should always be kept in the freezer and eaten when chilled.

The Rawtarian's Thoughts

By The Rawtarian

Gotta love this no-equipment-required recipe! Just mix in a bowl, press down into a pan and freeze.

Lately I've been eyeing up some gourmet sesame seed bars at the grocery store and wanting a similar chewy texture. Well, I've replicated it myself! Nomnomnom.

There are a number of critical ingredients in this recipe. The sesame seeds are important because they lend that chewy texture, the ground flaxseed (AKA flaxmeal) is important because it holds the bars together, the tahini (or another nut butter) is important because it provides creaminess, and the coconut oil is important because it semi-hardens the bar in the freezer.

But feel free to substitute different dried fruit for the raisins, and instead of coconut you could use hempseed hearts or just substitute even more sesame seeds. As for sweeteners, I've made these with maple syrup, but feel free to substitute with agave nectar or honey.

The only problem with this recipe is that they are so tasty they may spoil your dinner!

Excellent! Best bar I have tried. I used currants instead of raisins, and honey instead of syrup. My husband devoured a few without blinking.

Hi Nadia, not really. The only possible substitute for the tahini would be another nut butter, like almond butter or cashew butter. Ideally very runny. That being said, tahini definitely lends the best flavor.

Do not use sesame seeds instead of tahini because they won't blend up well and the oils won't be released and the recipe will be way too dry and won't stuck together.

Hope this helps!

I made this recipe a few weeks ago and followed the recipe exactly. My son and I love chocolate, so when we brought it out of the freezer to cut into bars, we coated the top with a thin layer of melted chocolate chips. I think of these bars as a fine wine, every time I took the dish out to have another bar, they were better. I loved them. They are definitely on my “make again and share” list.

Delicious! Made a batch last night and added a chocolate layer on top just for fun. I used a silicone mould and was impressed that the bars solidified and withstood removal in one piece, too. Excellent addition to the household recipe book!

I love these! Thank you. They remind me of the Greek Halvas. I added lemon juice to the batter and wow!!! Do you use hulled or un-hulled sesame seeds?

Hi Yvonne!

I use hulled sesame seeds.

I could see the similarity to halvah taste - it's the tahini, probably :)

Is the flaxseed half a cup before or after it is ground?

Hi Jeanie,

It is half a cup after it is ground. (I usually use pre-ground flax seeds, called flax meal. This makes it easier for me. BUT you can absolutely grind your own flax seeds. Either is fine, but do measure after it is ground.)

These are yummy! We used chopped dates in ours and I'm not sure they will last long :-) I even had a fairy to help mix, although she had removed her wings at this point.

Fee - your fairy is divine!! That little face and her grip on the bowl and the spoon. She's all in! What a sweet girl and I'm so happy to see her getting in there with a grin on her face. Beautiful.

Thank you :-)
She loves helping and of course eating what we have made as well. The good thing about this kind of 'baking' is that it is a lot easier to clean up than flour when she sprays it out the bowl!

I made a batch of these to have as an after work snack! Auto type has another opinion. So sorry for the typo in my previous comment.
