Ingredients
- 2 cups sesame seeds
- 1 cup raisins
- 1/2 cup dried, shredded coconut
- 1/2 cup flaxseed meal (ground flax seeds)
- 1/2 cup tahini (a nut butter)
- 1/4 cup coconut oil
- 1/3 cup maple syrup
- 1 teaspoon pure vanilla extract
- 3/4 teaspoon sea salt
Recipe Directions
- 1. Place all dry ingredients in a large bowl and stir.
- 2. Add remaining ingredients and stir gently with a spoon.
- 3. Press mixture FIRMLY down into a large dish. (I use a large brownie pan.)
- 4. Cover and freeze for at least 1 hour.
- 5. Bars should always be kept in the freezer and eaten when chilled.

Gotta love this no-equipment-required recipe! Just mix in a bowl, press down into a pan and freeze.
Lately I've been eyeing up some gourmet sesame seed bars at the grocery store and wanting a similar chewy texture. Well, I've replicated it myself! Nomnomnom.
There are a number of critical ingredients in this recipe. The sesame seeds are important because they lend that chewy texture, the ground flaxseed (AKA flaxmeal) is important because it holds the bars together, the tahini (or another nut butter) is important because it provides creaminess, and the coconut oil is important because it semi-hardens the bar in the freezer.
But feel free to substitute different dried fruit for the raisins, and instead of coconut you could use hempseed hearts or just substitute even more sesame seeds. As for sweeteners, I've made these with maple syrup, but feel free to substitute with agave nectar or honey.
The only problem with this recipe is that they are so tasty they may spoil your dinner!

Made these on holiday when in unfamiliar kitchens to take to people we were visiting. So easy and delicious had to make another batch. Too easy and way nicer and healthier than ones Mum used to make. Everyone wanted the recipe.

Can we use date paste (mashed dates) & flax seeds to harden or hold the bars together, instead of coconut oil!?
If yes, how much? Thanks again!

I don't think it would help enough to hold it together, but it would probably still taste good haha.
If you were going to try it, you'd need a lot of date paste - like maybe 1 cup?
Flax seeds will help hold it together, but they will also affect the taste a lot.

Hi, I made this recipe, and the taste is really delicious! But it was a bit too dry...I could not make a bar.
I suppose I used the "dry" part of the tahin (because the oil is above)...I used the coconut in a solid state too. Do you know where it went "wrong"?

Yes, I usually stir my tahini before using - also, next time you could melt the coconut oil, that might help. Also, just adding more of both might help too if it becomes a problem.

I had my doubts about this slice as I am not a fan of tahini, but almond butter wasn't available in my local store so I made it anyway and just love it! Thanks once again, Laura-Jane, for another delish recipe :)

I whipped up my first batch of these this morning. Delicious! The best part of raw foods is that you can sample the product as you create! Nom nom! Thank you for the recipe. So appreciated! My batch is in the freezer firming up. Question: has anyone tried dehydrating these bars (once firm enough to cut)? I'm going to try it out....and will report back on the results.

This recipe totally begs to be nibbled on while uncooking it. I haven't dehydrated them, but I think they'd be a good contender, although the coconut oil will mean that they won't crisp out completely

Love these! Thinking these would also work well to shape into balls. Going to experiment with that idea and maybe seeing how a bit of raw coco powder will do.

thank you sooo much for posting this recipe-bar far the best chewy and morerish bar i have made! i used currants and LSA with a hint of cinnamon and we all (hubby and 3 boys) scoffed them! Going to use cranberries next and see how they pan out.
