Ingredients
- 2 cups sesame seeds
- 1 cup raisins
- 1/2 cup dried, shredded coconut
- 1/2 cup flaxseed meal (ground flax seeds)
- 1/2 cup tahini (a nut butter)
- 1/4 cup coconut oil
- 1/3 cup maple syrup
- 1 teaspoon pure vanilla extract
- 3/4 teaspoon sea salt
Recipe Directions
- 1. Place all dry ingredients in a large bowl and stir.
- 2. Add remaining ingredients and stir gently with a spoon.
- 3. Press mixture FIRMLY down into a large dish. (I use a large brownie pan.)
- 4. Cover and freeze for at least 1 hour.
- 5. Bars should always be kept in the freezer and eaten when chilled.

Lately I've been eyeing up some gourmet sesame seed bars at the grocery store and wanting a similar chewy texture. Well, I've replicated it myself! Nomnomnom.
There are a number of critical ingredients in this recipe. The sesame seeds are important because they lend that chewy texture, the ground flaxseed (AKA flaxmeal) is important because it holds the bars together, the tahini (or another nut butter) is important because it provides creaminess, and the coconut oil is important because it semi-hardens the bar in the freezer.
But feel free to substitute different dried fruit for the raisins, and instead of coconut you could use hempseed hearts or just substitute even more sesame seeds. As for sweeteners, I've made these with maple syrup, but feel free to substitute with agave nectar or honey.
The only problem with this recipe is that they are so tasty they may spoil your dinner!

thank you sooo much for posting this recipe-bar far the best chewy and morerish bar i have made! i used currants and LSA with a hint of cinnamon and we all (hubby and 3 boys) scoffed them! Going to use cranberries next and see how they pan out.

Hmm maybe oh so slightly, and sadly I could not find raw Tahini anywhere either so it probably changed the taste. I might try almond butter next time since I can get that raw. I love this as a breakfast though, nice and quick and filling too.

Is there a possible replacement for the Tahini?

Hi Nadia, not really. The only possible substitute for the tahini would be another nut butter, like almond butter or cashew butter. Ideally very runny. That being said, tahini definitely lends the best flavor.
Do not use sesame seeds instead of tahini because they won't blend up well and the oils won't be released and the recipe will be way too dry and won't stuck together.

Looks delicious Shelly! Love the pic too. Mmm currants. Now that is a dried fruit that I LOVE and that I NEVER use! I am weird. You are inspiring me to keep currants in my regular rotation. Not sure why I don't think of them often!

I also use currants in your apple breakfast bowl...and sliced almonds...no grains. It is a house favorite. In fact, I invited a friend over on Sat. and we had an anti-cook event. We made your carrot cake, lemon bars, and brownies. All went in freezer. We make brownies a la Almond Joy with your icing and coconut. I turn people on to your site daily. Thanks for making this lifestyle scrumptious!
