Ingredients
- 1 cup walnuts
- 1/3 cup sundried tomatoes, soaked in oil
- 1 1/2 tablespoons olive oil
- 1/2 tablespoon chilli powder
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon sea salt
Recipe Directions
- 1. Place all ingredients in food processor.
- 2. Process until a texture similar to the photograph is reached. (1-2 minutes)
- 3. Enjoy immediately or store in fridge for up to 4 days.

This walnut-based raw taco filling is an excellent, hearty vegan topping for tacos or a taco salad. It keeps in the fridge extremely well for up to 4 days. A food processor is required.
This recipe is an excellent, hearty base. It’s a perfect addition to a whole foods vegan meal because it adds a heartiness and depth that’s hard to get without faux meat soy products.
This recipe calls for sun-dried tomatoes that have been soaked in oil. Usually, you will purchase them pre-soaked.
If you don’t have walnuts, pecans will work equally well in this recipe.
As you can tell by the ingredients, the size of this recipe is quite small. Double up as necessary.
This raw taco meat recipe has been an excellent, hearty base and my husband loves it--more than I do, even. I often spread this recipe on romaine lettuce, and I top it with tomatoes and fresh sprouts. Sprouted adzuki beans go surprisingly well with this recipe. It's a perfect addition to a raw meal because it adds a heartiness and depth that's hard to get on a raw food diet. I have been a vegetarian since 2001. Once I went vegetarian I immediately replaced meat with soy products. One of the most difficult parts of my transition to the raw lifestyle has been to give up the soy and tofu products that were staples in my husband's and my diet. I seem to like small recipes because I am thrifty and I want to try a small batch before I invest 2 cups of this or that into a recipe that doesn't turn out well.

It was awesome but I hate the smell of sundried tomatoes! Do you have any idea what to do about it? And how do you wrap the lettuce?

Hmmm, smell of sundried tomatoes.... Perhaps you can use the ones that have been soaked in oil first, they don't smell as bad.
Lettuce wraps, very simple. I just lay out a big piece of romaine, fill it up lengthwise, and then close it lengthwise and gobble it up!

What a brilliant website you have! I have spent the last two days on it trying to figure out how to get started on the raw journey (after the arrival of my new vitamix :-))
I made cashew milk this morning - yum!!
I have such a basic question that it seems rather silly, but I am reading through the wonderful dinner recipes like taco 'meat' and zucchini pasta and I am very much wondering how you heat these to serve? Or if you do at all? Do you serve heated? If yes, please tell me how?!?!? hahah

Not a silly question at all. In short, not heated :) But you get used to it, and if it's the right recipe it's not that weird. Seriously!

Hallo!! I was so tired of eating just an apple or just carrots...so I googled raw food recipes and your page came up. I made this dish last week and I just have to tell you... I LOVE IT! This is one of my favourite recipes! Thank you! Thank you! I usually have it on a salad:
just on a simple bed of crunchy lettuce with shredded carrots -no dressing - is amazing and quick. The taco meat seasons the salad.
Also super good with tomatoes, avocado, and lime juice added to the salad, and macadamia sour cream if you want to get super fancy :)

Hi Liz, because I am getting good at this raw food stuff although I have never had carrots with this taco meat recipe I just KNOW that that flavor combo would be AWESOME! In fact, I have always felt that the recipe was missing something, and I think that is IT! I am really looking forward to trying this with shredded carrots, they are going to add a lightness and moisture that was missing. Thank you for writing!

My sun dried tomatoes are in oil should I skip the soaking part? And how long will the taco mixture keep in the fridge?

Hi Mary, Since your sundried tomatoes are already soaking in oil then you don't need to soak. This recipe keeps very well in the fridge in a sealed container - probably for 3 days or so.

Perhaps this recipe just didn't do it for ya in terms of the flavours? I don't soak the walnuts first. Perhaps you needed to add more oil or process longer?
